4 TBS. Olive Oil
6 oz. Onions, julienne
4 oz. Green peppers, julienne
4 TBS. Sofrito paste *
1 c. Tomato sauce
1 pkg. Pot Roast - Miniat 7009
Heat the olive oil in a large pot.
Add the onions and peppers and cook until the onions are translucent.
Add the sofrito and tomato sauce and bring to a simmer.
Shred the pot roast and add the meat and juices to the tomato sauce.
Simmer 20 minutes.
Serve over steamed rice accompanied by black beans.
