Ed Miniat Chefs Win 2018 RCA National Professional Savory Culinology® Competition
In a fast-paced battle of culinary cunning and food science knowledge, Culinologist® Dylan Donovan and Assistant Research Chef Kimberly Nies of Ed Miniat, brought home the gold medal in the 2018 Research Chefs Association’s (RCA) annual National Professional Savory Culinology® Competition held on March 27, in Savannah, GA.
In December 2017, long before any food was made, an all-encompassing competition proposal including nutritional information, commercialization specifications, packaging mock ups, and even re-heating instructions was submitted to the RCA. In January 2018 three teams were notified that they had been chosen to compete live at the annual RCA conference.
Each team was required to create a commercialized retail product themed on the cuisine of Georgia as served in an upscale restaurant for a frozen retail supermarket entrée. All food ingredients were provided by sponsors and RCA on-site, but there was a twist: the must-use ingredient list was revealed to the chefs only two weeks prior to the competition. Must-use ingredients were a blend of everyday pantry items and ingredients commonly used in food manufacturing, and included duck meat, mustard greens, black eyed peas, honey, food flavors, and functional ingredients such as bean powder and xanthan gum.
During the competition, the chefs had two hours to create their recipes while judges observed their food preparation, critiqued their techniques, and questioned them about the functional ingredients used in the commercialization of gold-standard culinary recipes. Once the dishes were prepared, a panel of judges evaluated the teams and their food on nine different criteria covering everything from professionalism and cooking techniques to plate presentation, taste, and accuracy of reheating instructions.
