As a 4th generation member of the Miniat family, Dave has a lifetime of experience with the organization. More than 30 years ago, he and his brother, Mike, pioneered Miniat’s current sous-vide cooking operation, creating a new channel of business that has served as the core capability of the cooked meat division, for decades. In 1996, he assumed the role of President of the company and has led Miniat through the construction of the South Holland plant, three major expansions, and a plant acquisition.
Under Dave’s leadership, Miniat has expanded its capabilities and footprint or order to support our customer’s own expansion into new product offerings and locations.
Dave holds a BS in Meat Science from Colorado State University. He serves on multiple boards and speaks regularly on both the meat industry as well as the family business model. He also served as Chairman of the North American Meat Institute.
Charles Nalon, President, Ed Miniat LLC, 4th Generation

Charles Nalon, known to most as Chuck, has been a part of Miniat for 25 years in various roles throughout the organization. While managing our strategic customers, leading the sales and R&D groups, and functioning as a senior vice president, Chuck honed his strategic approach to business. His personable nature and business acumen make him an invaluable asset to lead our cooked meat division.
Chuck holds a BA in Communications from Purdue University.
When Partha joined Miniat in March of 2018, he brought more than 25 years of accomplishments from some of the world’s most recognized food brands and manufacturers.
At Miniat, Partha is committed to building on our world-class QA and Safety programs, as well as driving continuous improvement initiatives for our manufacturing process to ensure seamless production for our customers.
Partha holds a BS in Chemical Engineering, an MS in Food Technology, and an MBA in Operations and Strategy.
Mark Shaw, Chief Financial Officer, Miniat Holdings

Mark join the Miniat Companies as CFO in July of 2018. He is a veteran of the CPG and Food and Beverage industries, serving in key accounting and financial leadership roles in both large and midsize manufacturers prior to joining Miniat.
Our customers benefit from Mark’s decades of industry expertise and determination to manage a financially stable business, allowing for opportunities to grow our capabilities and facilities in order to better meet their business needs.
Mark holds a degree in business administration from Elmhurst College and is a CPA.
For over 20 years, Shawna has used both her business and legal expertise to lead the development of the Miniat team, building an internal community that reflects the Miniat values and culture of Driven to Serve™.
Through the Driven to Serve program, she ensures our employees understand the tremendous value that Miniat puts on service excellence and collaboration with our customers.
Shawna holds her BBA in Business Administration, her Master of Jurisprudence, and multiple Certifications in Organizational Development and Leadership.
John Draz, Executive Research Chef, CRC®, CEC®, CCE®

Has been featured on the PBS series, Great Chefs of Chicago, and served in various head chef positions. His other accomplishments include being chef/owner of a 300-seat fine-dining restaurant, co-founding the culinary program at Kendall College, and most recently co-authoring a textbook, The Culinary Professional. In addition to his role at Miniat, Chef John is also an active member and former board member of the Research Chefs Association.

Brings over 21 years of animal science and meat processing experience to our team. Before joining Miniat in 2016, he led product development and commercialization teams for one of the largest, branded FMCG food companies in the United States.
Sue Schwartz, Vice-President, Quality & Food Safety

Has over 25 years’ experience in quality systems, food safety, and product development in the food industry. Prior to joining Miniat in 2016, Sue spent 19 years with a large producer of branded meat and poultry products in various quality leadership roles.
Dan Soto, Senior Director, Sales

A 30-year veteran at Miniat, has held positions in operations, project management, research & development, process and product development, industrial account management, and a variety of sales leadership roles. In his current role, Dan provides direction and leadership to the sales team and cultivates sales opportunities through new product development and commercialization strategies.

As a 5th generation family member, Mark continues to uphold the Miniat tradition of personal customer service. He combines this with a deep understanding of a customer’s unique menu needs and operational challenges, in order to support each business’ individual objectives.
In addition, Mark is integral in identifying and developing new product offerings, innovative processes, and markets for Miniat, that create new growth opportunities for both current and prospective customers.
Mark holds a Bachelor of Applied Science in Agricultural Business Management from the University of Wisconsin, as well as an MBA from Northwestern University.
Rachel Allen, Director, Business Administration

Has worked at Miniat for 13 years. She oversees all office functions and, most importantly, our customer service and pricing teams. Her get-it-done attitude ensures that our customers receive the highest level of support in a timely manner.

Since joining Miniat in 2016, he has been a key stakeholder in our evolution into a continuous improvement focused organization, bringing ongoing innovation into manufacturing and supply processes.
