The Miniat Legacy
Miniat has a rich heritage that began in the Chicago Stockyards over 120 years ago. We respect the spirit of entrepreneurialism that drove early generations of the family and continue to uphold the values that have allowed recent generations of the Miniat family to add innovative processes and capabilities to support our customer’s evolving needs.
With a legacy that stretches back over a century, Miniat has changed in many ways since the earliest days in the Chicago Stockyards.

Each generation has adapted the business to respond
to changes in industry dynamics.
1896 – 1940’s
We evolved from our founder, Michael Miniat’s first horse-drawn meat peddling cart to running multiple sales routes in refrigerated trucks.
1950’s – 1960’s
As the meat business changed in the 1950’s and 1960’s we adapted with it, to provide expert butchery and meatpacking services.
1980’s
In the early 1980’s we made a critical shift in our business that is still reflected in our model today, by pioneering the cutting edge sous vide cooking method.
